Chocolate Zucchini Cake

As promised, here is a staff favorite!

What better way to use all that zucchini than to disguise it with chocolate?

from “Taste of Home,” August/September 1998, “Men Who Run the Range”

1/2 c butter, softened
1/2 c vegetable oil
1 3/4 c sugar
2 eggs
1 t vanilla
2 1/2 c all purpose flour
1/4 c cocoa
1 t baking soda
1/2 t baking powder
1/2 t cinnamon
1/2 t cloves
1/2 c sour milk  (1 1/2 t vinegar or lemon juice, plus milk to equal 1/2 c.  Let it sit for a few minutes.)
2 c shredded zucchini
1/2 c chocolate chips
1/2 c brown sugar

In mixing bowl, cream butter, oil and sugar.  Beat in eggs and vanilla.  Combine dry ingredients in separate bowl.  Add dry ingredients to creamed mixture, alternately with milk.  Mix well.  Stir in zucchini.  Pour into a greased 9×13 pan.  Sprinkle with chocolate chips and brown sugar and ½ cup chopped walnuts if desired.  Bake at 350 degrees for 40-45 minutes.
