Festive December Holiday Salad
Kale and Cranberry Surprise
So here’s a healthy colorful addition to any holiday table this season. A little green, a little red, a little sweet, a little salty…this salad compliments a variety of dishes and travels well to gatherings.
Prepare ahead of time and toss the dressing in at the last minute. Enjoy!!!
- 1/2 cup lemon juice
- 2 tablespoons olive oil
- Dash of sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 bunch kale, cut into bite-size pieces
- Package of Grape tomatoes
- 1/2 cup sliced almonds
- 1/2 cup dried cranberries
Optional- Crumbled blue cheese or crumbled feta cheese on top.
Whisk lemon juice, olive oil, sugar, salt and pepper. Adjust seasoning to taste. Blanch bite size pieces of kale in boiling water for 30 seconds then place in ice water to stop the cooking process. Shake dry. Place in bowl and add tomatoes, almonds, cranberries and cheese, if desired. Toss with dressing and serve immediately.
