Peach Cobbler – A Lite Summer Dessert
With peaches coming into season, there’s no better time to try this wonderful Peach Cobbler recipe from one of my best friends.
8 peaches- peeled, pitted and sliced into thin wedges
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all purpose baking flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small cubes
1/4 cup boiling water
Preheat oven to 425 degrees F.
Let the recipe magic begin…
In a large bowl, combine peach slices, 1/4 cup sugar, 1/4 cup brown sugar, 1/4 tsp. cinnamon, nutmeg, lemon juice and cornstarch. Toss to coat the peach slices evenly and pour into a 2 quart baking dish. Bake in the preheated oven for 10 minutes. While the peaches are baking, combine the other ingredients, in a large bowl, the rest of the sugar, brown sugar, baking powder, salt and blend in the butter with your fingertips, or a food processor, until the mixture looks like cornmeal. Stir in water until the mixture is just combined. Remove the baked peaches from the oven and drop spoonfuls of topping over them. Then sprinkle the rest of the sugar and cinnamon mixture over the peaches. Bake another 30 minutes until the topping is golden brown and bubbly. Top the dessert with some whip cream or ice cream and Enjoy!
