Salmon with Summery Salsa – In the Winter!
Salmon, known for its benefits to the brain, heart, waistline and more, makes a great meal any time of year. Here salmon is paired with a colorful and fresh summery style “salsa” to perk up the appearance and taste of a mid-winter meal.
- 4 Salmon fillets
- ½ Cucumber (peeled and quartered)
- 1 cup Cherry tomatoes (halved)
- ½ Yellow bell peppers (seeded and julienned)
- 2 Tbsp. Shallot (minced)
- 1 Tbsp. Fresh cilantro (chopped)
- 1 Tbsp. Lime (for fresh lime juice)
- 1 tsp. Canola oil
- 1 tsp. Honey
- Red pepper flakes (to taste)
For the salmon, salt and pepper both sides to taste and cook fillets your favorite method. Weather permitting you can brave the outdoor barbeque and perhaps use a cedar plank method. In case of inclement weather you can pan sear or broil your salmon till opaque throughout.
For the salsa, combine prepared cucumbers, cherry tomatoes, bell peppers, shallot, and cilantro. In a separate bowl combine lime juice, canola oil, honey, red pepper flakes, and ½ tsp salt. Once combined add to vegetable mixture and gently toss.
Plate salmon fillets and top with salsa.
